If anyone at Baylor knows a thing or two about food, it's Roberta Anding, registered dietitian at BCM and team dietitian for the Houston Texans.
Anding is sharing one of her family's favorite recipes for the holidays. Best of all, the recipe is quick and easy.
1 box of spice cake
1 cup of water
3/4 of a 15 oz can of pumpkin
Preheat the oven to 350 degrees and spray a Bundt pan with non stick spray. Mix the three ingredients together in a medium bowl with an electric mixer until well blended. Spoon into the Bundt pan and bake for 40 minutes.
"This recipe is a great way to add a vegetable to a dessert. This is a family favorite and was a real hit with my son's cross country team when he was in high school," Anding said.
